Week 2 of VeganMoFo 2017 is all about Behind the Scenes – the gadgets, tricks and secret ingredients that help you to produce your culinary masterpieces. While we’re thinking about the processes in the kitchen, it seems like the perfect time to run a series of cookbook giveaways courtesy of the wonderful people at Vegan Heritage Press.
Vegan Heritage Press is an independent vegan publishing company which is no doubt behind some of your favourite recipe books – check out their published authors here! They are staffed by vegans and are doing great work meeting the growing demand for vegan cookbooks.
From Monday to Friday this week we’re running a daily giveaway of one of Vegan Heritage Press’ new titles.
On Wednesday, we’re giving you the chance to win a copy of Vegan Mexico by Jason Wyrick. Jason, who also wrote Vegan Tacos, dishes up mains, sandwiches, desserts, snacks and more, including recipes like classic sweet corn tamales, blue corn mushroom bocoles and tres leches cake. Yum!

Pollo vegano en mole is my favorite. Jackfruit makes an excellent swap.
I guess “tacos” is too obvious and/or vague, same with “salsa”… But that’s actually what I love about Mexican food (and Mexican-inspired food). It’s deceptively simple and can go in so many directions. The choice of pepper, whether it’s fresh or roasted or dried or smoked, makes all the difference. and that’s just one ingredient!
P.s. We are planning a Mexican-inspired Thanksgiving menu this year and this cookbook would be a huge help. 😉

Tamales…sweet tamales…
Fajitas mainly because I know they will be vegan. My favorite place in town throws all the veggies in them potatos, all color of peppers, broccoli, cauliflower, mushrooms, onions, corn, zucchini and summer squash. I kid you not they make the best dish for me.
I’ve been really into Chalupas lately, and also love me some arroz con seitan!

Ooh.. my favorite mexican food.. that is so hard. My favorite dish is probably chik’n enchiladas and spanish rice. This cookbook looks lovely!
I love Spanish rice loaded up with fire roasted tomatoes and tri color peppers.
