It’s December now, and VeganMoFo is over for another year! We really hope you’ve enjoyed this month and have both created and discovered lots of wonderful vegan food. It’s been great seeing people from all over the world post about veganism and vegan food all month long, and hopefully this month has inspired you to keep up the vegan eating!

For this final round up, I’ll include a mixture of posts that followed the daily prompts, and posts that didn’t. The prompts and weekly themes have proved an excellent way to keep things interesting and see how different people interpret them, but it’s also been fascinating to see others create their own themes and post food outside of the prompts! I’ll also include lots of posts, because it’s been very hard to choose and I’d like to showcase as much as possible!

Finally, we’d like to say thank you to everyone who participated this year – it’s been wonderful to get to know you all. This isn’t the last you’ll hear of us though – we’ve got some great plans in the works for VeganMoFo, so stay tuned and stay vegan!

Rather than bake cookies or cake, Jobo baked lasagne! And Thanksgiving lasagne at that – with mushroom gravy, sweet potatoes, green beans, turkey spiced yuba, kale, and all topped with stuffing. Uhm, who is hungry right now? I know I am.

Finally, our own Jenny managed to sneak one final post into VeganMoFo today (we’ll allow it!). She posts a monthly “Cookbook of the Month” and this month she used VeganMoFo as her own cookbook! Featuring recipes from MoFo’ers across the board her post shows just some of the amazing recipes which have come out of this month. If you’ve found any recipes you enjoy, or food which inspired you this VeganMoFo I encourage you to follow her example – let the author of the post know how it turned out and how you liked it, as it’s great to get feedback on your food, and it means you can keep in touch and find more great recipes!

Can you believe it? It’s the last Friday of MoFo! Have you met your MoFo goals? Exceeded them? Have some, um, room for improvement next year? Regardless, let’s have a toast as we kick off the final weekend of Vegan MoFo 2014.

Apple Pie ShrubI can’t think of anything better to celebrate with than this Apple Pie Shrub from Becky at Glue & Glitter. This spiced apple pie soda can be made either with or without rum, depending on your inclinations.   If your fall weekend plans involve hitting up the apple orchard, definitely snag a few extras for the applesauce needed for this delightful fall drink.

Vegan Lemon Meringue PieNeed another reason to celebrate? Kari at Bite-sized Thoughts has done the impossible – a vegan lemon meringue pie. I know, I know, I’d always heard that it couldn’t happen, but this picture says it all. Lemon meringue used to be one of my favorite pies. I can hardly wait to welcome it back into my life.

Awesome tips for traveling while veganAfter your sweet tooth has been sated, head over to The Vegan Word where Caitlin has been talking wanderlust hungerlust all month. She’s shown that vegans can eat well anywhere, and today she’s featuring Jojo, the intrepid traveler. Jojo always seems to be heading off on some far-flung adventure, and today she’s spilling the beans on her insider secrets.

Miso glazed Brussels sproutsSpeaking of insider secrets, Lazy Smurf is letting us in on her secret ingredients, and today she’s sharing the merits of miso. For gravy, dressing, vegan cheeses, and these miso glazed Brussels sprouts, miso is a must.

Layered saladFinally, what would a month of vegan food be without that beloved canister – the Mason jar. It can hold smoothies, iced coffee, dried beans & grains, and oh, yeah, it can be used for canning. Plus, it can be used as a receptacle for layered salads. Bianca waded the waters of the layered salad and tells about it on Vegan Crunk.

Sunday Feasting: A Round-Up of Dreams

Hi guys, Gabrielle here. I’m starving. Give me all of your foods! No, seriously. My google reader has me seriously craving a dream feast made up of MoFoers’ recipes. Grab a snack and join me as we imagine-eat our way through this thing of beauty.

But! Before we proceed, make sure your nails are painted teal, okay? It’s crucial! It just happens to be National Feral Cat day. Don’t let the national thing turn you away, non-Americans, feral cats are everywhere, awareness is always a great thing, and your nails will be teal.

I think most vegans have made up a meal out of side dishes at a restaurant before, and to be honest, I don’t mind it one bit! Especially if something like this curry-roasted cauliflower from The Urban Vegan is on the menu.

That pretty little squash on my counter has its future determined: delicata squash circles.

Moving on to mains, the Crabby Crafter (adorable blog name!)’s green and white bean casserole with spicy sweet potato wedges looks just dazzling.

I have no self-control when it comes to Ethiopian food—injera gut be dammed. I would eat the hell out of this plate of Aussie-Ethiopian plate from Meet the Wikos.

Vegan MoFo’s own Luciana only ate half of this breakfast burrito! If I didn’t love her so much after meeting her at Vida Vegan Con, I would mock her dainty appetite (and inexplicable affinity for chia kombucha).

Next we’ll zip over to Stuttgart, Germany, where we will munch on these amazing Italian vegan gelato “conos” with Vegan Miam.

Forgetting my theme (if there ever was one) let’s get distracted by Jojo’s adorable Football Food Sunday (she’s a Brit who is watching American football! Hilarious!), featuring avocado fries, barbecue tofu, and loaded potato skins. Give me this spread for a (hockey) game any day.

Oh right, vegans eat salad! How about this gorgeously plated gnocchi potato salad with green beans and quinoa?

Everyone who knows me knows how much I love mushrooms—the more exotic the funghi the better. So I’m pretty stoked on Veg-am’s mushroom instalments for 1 food 5 ways: here is the herbed polenta cups with mushroom onion stuffing.

Finally, I will leave you as I pop a hundred of these peanut butter thumbprint cookies into my mouth from a Toronto farmers’ market via Until We Eat Again.

MoFos! I drive all of my American friends up the wall talking about Canadian Thanksgiving—one of my favourite holidays—but they’re just jealous that we don’t have to wait until November to get our Tofurky on. Since I’m currently embarking on an amazing and terrifying house-sitting gig in Victoria, BC, I’ll probably be having toast for dinner, so we can all be jealous of the following Canadian Thanksgiving dishes perfect for channelling your inner hoser.

While those of us out on the West Coast on getting reacquainted with our closest friend—the rain—lucky Nicole in sunny Southern Ontario is taking gorgeous outside shots of these birthday lemon tarts over at at A Dash of Compassion.

I’m a little out of sorts that my Thanksgiving weekend didn’t kick off with these perfect pumpkin waffles from you can’t eat the air!

Is there anything better than apple pie? Evidently, yes, there is apple pie CAKE.

Not only did Jennifer at It Ain’t Meat, Babe discuss vegan Thanksgiving celebrations with on Canada’s prestigious CBC radio, she also found the time to suggest we try her Sweet Potato Bread Pudding. I’ll take advice from anyone with Dylan-inspired blog name.

You’ve seen Bryanna Clark Grogan’s World Vegan Feast making its rounds around the MoFo-sphere, so clearly we knew BCG wouldn’t leave us hanging on Thanksgiving. Try her Mediterranean mashed potatoes, and don’t fret if you find yourself eating them straight out of the pot.

I’m patriotically practising my French by reading Vegan à Montréal, and we all know that Les Français are masters of the crêpe, but it looks as though the Québécois can also hold their own with a Swiss-style chickpea omelet.

Finally, MeShell, I am begging you to invite me to your Thanksgiving next year. Her spread includes cornbread muffins, onion gravy, smashed garlicky potatoes, grapefruit black pepper cranberry Sauce (fancypants!), stuffing in acorn squash, salads, pies, lentil loaves, and gosh, probably more. I’m met that girl. She’s a wizard. And her partner made a freaking pumpkin cheesecake!

With a little more than a week left, there is still lots of MoFo deliciousness. Lots of bloggers are featuring pizza, sandwiches, and other creative ways to use dough. I’ll eat pretty much any (vegan) thing if you stick it on crust or baked in a pie.

Vegtastic Voyage shares a pretty amazing veggie calzone with us, and In-A-Gadda-Da Vegan orders up a wonderful cheeseless pizza piled high with veggies.

Meanwhile, Amey over at Vegan Eats & Treats whips up a beautiful tomato pie in a cornmeal crust.

I’ve yet to make any of the recipes from Vegan Soul Kitchen, but I really want to try the BBQ Tempeh Sandwich with coleslaw that is featured over at Cooking Vegan With Soul.

Columbus Vegan whips up jackfruit carnitas and stuffs them into a lovely, cheesy chimichanga, and Veg Chef-to-be whips up some homemade arepas stuffed with black beans.
