December MiniMoFo Roundup

December MiniMoFo Roundup

Welcome to 2018! We hope you all enjoyed the holiday season and ate lots of delicious food – and from all the MiniMoFo contributions, we are pleased to see all the baking you’ve been doing/eating!

My Apologies for the Novel

Julie got someone else to do the festive baking for her, and headed to Vegan Treats, an all vegan bakery, where she got a Christmas tree cheesecake-on-a-stick (really! Check out the picture on her blog) and this adorable reindeer cake.

@crumbs.and.caramel

Look at this beautiful chocolate fudge cake from Crumbs and Caramel, topped with frosted berries which make it oh-so-festive!

Herbivore’s Heaven

Jenny went out for a festive afternoon tea – she’s quite the connoisseur of vegan afternoon teas and is keen to point out that this was a rare hummus-free tea, a sign of a truly creative host! Doesn’t it look quaint and tasty?

@raisinsecte

Sophie made a vegan bûche des fêtes – which looks amazingly chocolatey and rich and tasty!

@notfunatparties

Jenny used the Chocolate Yoghurt Bundt Cake recipe from Isa’s Superfun Times cookbook and added mint glaze, sea salt flakes, and raspberry dust to make a beautiful Christmassy cake.

@vegfullife

Hands up who else made sugar cookies this month? A classic for the season, and Kristy’s look delicious topped with buttercream and sprinkles!

Just Bloggs

Justine’s mince pies have homemade pastry and mincemeat – with cranberries for that extra festive touch! Find the recipe on her blog.

@onewindowsarah

Sarah made vegan and gluten free snickerdoodles following an Oh She Glows recipe. Snickerdoodles are great year round, but the spices make them perfect for festivities!

@dimsimkitty

Susan also used the Superfun Times cookbook to make these cranberry spice oatmeal cookies. Cranberries keep cropping up this month and for good reason – they’re delicious!

@veganfeastcatering

Sprinkled with sugar, Janet’s blueberry scones are sparkly and beautiful. Sweet scones are a tasty way to start the day!

@ksp_vgn

Kristen’s array of vegan Christmas cookies is quite breathtaking! Where would you start first? I want to try them all!

@vegan_raptor

Eat the biscuits, you must. Vegan Raptor’s cookies seem to have been held hostage, but they look good enough to fight for.

@lisarturner

Biscotti are another holiday favourite – here are Lisa’s maple-walnut biscotti cooling before being iced. Could you wait?

@veganistamama

Veganista Mama made marzipan from scratch! And coated it in chocolate – which sounds like the perfect snack (and look at the cute snowman plate!)

@juli.ane_x

How about some savoury Christmas baking? Here’s Juli’s Christmas centrepiece – which is quite honestly beautiful! It’s a Moroccan spiced spinach and pumpkin pie and sounds delicious.

@happylittlelunch

As always, Happy Little Lunch has come through with a wonderful lunch for her kid! She’s also included little sugar cookies to decorate to fit into this month’s theme.

@oohsarracuda

Candy canes are so very festive, and stirred into chocolate chip cookies? Yes please! Sarra’s candy cane cookies look amazing.

@ladyfunk25

More cookies? Er, of course! You can never have too many cookies. These crinkle cookies are so pretty, too!

@ambereatsveg

Not only do these cookies look tasty, they also come with a history! Amber veganised her grandmother’s recipe for Mexican Wedding Cookies – veganising family recipes is a wonderful way to bring people together.

@yixzyy

And where would Christmas be without some gingerbread? Emma made these tiny gingerbread men for Christmas!

Living the Dream

If you’ve been following Jen’s story this year, you’ll know that it’s been really rough for her and her family – living in the Keys and being hit very hard by Irma. That makes it even more impressive that she baked hundreds of sugar and gingerbread cookies to give out to the community! How amazing is she?

@vegansneedsauce

Just take a minute to look at that gorgeous gooey chocolate frosting. Ooooh. And doesn’t the raspberry compliment it perfectly? No wonder Emily’s cakes went down a treat at her party!

@vegandollhouse

Isn’t this a work of art?! Vegan Dollhouse’s carousel is stunning, and must have taken a lot of hard work!

@hcmerenda

Crinkle cookies again, because I just love crinkle cookies. Helen made two varieties – chocolate mint and chocolate cardamom. Yum!

Thank you everyone who took part in this month’s MiniMoFo – it’s been packed full of some delicious bakes! Stay tuned to find out all about January’s MiniMoFo…

December MiniMoFo

December MiniMoFo

It’s that time of year again when for many of us the weather is getting colder and colder, and there’s a big winter holiday right around the corner.  We’re urging you all to keep warm this December with our MiniMoFo theme:

Festive baking!

It doesn’t matter which occasion you’re celebrating, or if you’re just looking for an excuse to eat treats – we want to see your baked goods!

Remember that anyone can participate in MiniMoFo, whether you registered for VeganMoFo or not – so tell your friends!  And don’t forget to use the hashtag #MiniMoFo on social media or post your link in the comments below, and check back at the end of the month for our roundup.

November MiniMoFo Round Up!

November MiniMoFo Round Up!

We’re happy to see that you weren’t too exhausted from VeganMoFo – lots of you embraced November’s lazy MiniMoFo theme!  Let’s check in on what’s been cooking!

@notfunatparties

Lazy food needn’t mean junk food – check out this plate of veg, rice and chick’n!  This is a lot more effort than I put in when I’m feeling lazy, so it’s extra impressive!

@vegan.raptor

Vegan Raptor took Ron Swanson for a lazy Sunday brunch. Ron has really come round to veganism – he looks ready to dive into those pancakes!

@dimsimkitty

MoFo regular Susan didn’t disappoint with this easy and delicious cheeseboard. Smoked sesame cheese sounds quite special, doesn’t it?!

@juli.ane_x

Juli travels like every Brit – too lazy to pack a lunch, you’ve got to treat yourself to a meal deal!  Fortunately Pret has plenty of options for the vegan on the go.

Coastal Vegan

Clare undertook some serious research into new ready meals from Waitrose in the UK – and one of them contains chicken pieces from the Vegetarian Butcher!  What a time to be alive!  Check out the full review on her blog.

@ladyfunk25

Angie has the right idea with this quick and easy stir fry made from whatever’s left in the fridge!

@veganistamama

Kimchi and black bean nachos sound extremely exciting!  Veganista Mama just threw these together at the last minute when she realised it was National Nachos Day – now that’s good improvising!

@vegfullife

Kristy made a big pot of goulash for her lazy meal!  This contains red lentil pasta, beefy crumbles and fire roasted tomatoes – it sounds absolutely delicious!

@ambereatsveg

Amber was feeling under the weather, so she was sticking to simple, lazy dishes, like this Asian coleslaw. Doesn’t it look sensational?!

@mosolyoga

This raw veggie bowl looks so refreshing – and so easy to throw together!

@pennyrakau

Doesn’t a fancy jar make all the difference? These PB&J overnight oats could be served in a fancy cafe, but Penny knows it takes mere minutes to whip up at home – including the homemade jam!

@mrs.spaetzle

Mrs S didn’t only make a lazy dish using whatever was in the fridge, she also invented a new meal!  Introducing “linner” – when you get home and it’s too early for dinner, but far too late for lunch.  We’ve all been there!

@twohappyrabbits

Our favourite travelling vegans threw this together on the road:  a tofu egg salad with pita, pickles and pea shoots!  Look at those vibrant colours!

@veg_domesticgoddess

Kira knows that lazy food isn’t just about having a hearty tempeh chilli in your freezer for emergencies, it’s also about minimising the washing up by using the same pan to heat the chilli and the quesadillas!

@veganfeastcatering

I can’t believe it’s still warm enough for ice lollies anywhere, but Janet’s proving me wrong by digging one of these blackberry and merlot pops out of the freezer for a lazy treat!

One Raw Bite

Jennifer’s lazy post was one that she hadn’t got round to posting for eight months!  This review of Philadelphia restaurant Circles appears to be worth the wait though – just look at the pad thai!

My Apologies for the Novel

I didn’t think anyone would manage to combine our MiniMoFo theme with Thanksgiving, but Julie proved me wrong!  Her post combines a quick and easy mac’n’cheese with a hearty Thanksgiving plate.  You can find out more on her blog.

Herbivores’ Heaven

There’s nothing better than a good lazy brunch, and over at HH you can read about not one but two all-vegan, all-you-can-eat buffet brunches!

Living the Dream @ Deer Run

Jen gives us another post-hurricane update along with a recipe for bread that’s so lazy, you can make it in your crock pot while you run around doing a million errands!

Not such a lazy month after all!  Thanks to everyone who has shared a recipe or picture this month.  Stay tuned for an announcement on December’s MiniMoFo theme!

November MiniMoFo

November MiniMoFo

You might be exhausted after a whole month of food blogging and snapping, but there’s no rest for the wicked:  MiniMoFo is back!  This time it should be easy-peasy though – you’ve got a whole month to make just one post, and the theme is:

Lazy!

You can interpret this however you like. It could be your favourite convenience food, your favourite spot for a leisurely coffee, a meal that your flatmate makes for you while you’re lazing on the sofa, your easiest recipe…so many possibilities!

Whatever angle you choose, just remember to use the hashtag #MiniMoFo on social media or post your link in the comments below, and check back at the end of the month for our roundup.

The VeganMoFo 2017 Survey

The VeganMoFo 2017 Survey

Thank you to everyone who made VeganMoFo 2017 so special – everyone who posted, shared, liked and commented!  We hope you’re all coming away from October not only with more vegan recipes up your sleeves, but also with some new online friends and more like-minded people filling up your social media!

We want VeganMoFo to be the best it possibly can be, so we’d love to hear your feedback and comments and find out what you want for next year. So we’d love it if you could spare a little time to fill in our ten question survey and tell us your thoughts – you can also let us know which month you’d most like VeganMoFo 2018 to be held in!

Even if you didn’t register for VeganMoFo 2017, we’d still love to hear from you – registered participants, latecomers who joined in and spectators who were happily liking and commenting are all welcome to give us feedback.

And to show our appreciation, we’ll randomly select one respondent to win the in-print vegan cookbook of their choice!  This prize will be available internationally.

You can find the survey here!

The survey is open from now until midnight GMT, Thursday 16th November.  We’ll contact the winner and announce the month for VeganMoFo 2018 shortly afterwards!

Week 4 Roundup!

Week 4 Roundup!

VeganMoFo is over for another year – hands up if you’ve enjoyed it? We certainly have, and the quality of food posted this year has been as wonderful as we’ve come to expect from our lovely MoFoers. So sit back and enjoy reading this final week’s roundup!

Day 23 – Fancy AF!

@gogreenly318

You need to follow the link and read Libby’s description of this salad – it’s clear how much thought has gone into the creation of it! Including a lesson on the “mush factor” of salads, which I will now always analyse.

@1981lisastevens

More salad today – it’s quite a fancy food it seems! This has vegan hoisin duck, five spice veg, lettuce, avocado, and kale, and certainly quells the notion that salad is boring – I’d happily eat this any day!

@laurenginger

Ah, pizza. Pizza is the ubiquitous food, it can be both super casual, and lovely and fancy too! Lauren’s cauliflower crust pizza with olives and arugula falls into the latter category, and it looks so tasty.

Day 24 – Party!

@notfunatparties

Ok, here’s an aptly named instagram handle for today! I think however, this meal would certainly be fun at parties! Jenny’s theme this month has been to recreate burgers from the TV show, Bob’s Burgers. There have been some amazing creations throughout the month and I have serious burger envy!

@veganosaurus

Veganosaurus’ theme this month has been “Conscious Colourful Consumption” and this beautiful photo highlights just how colourful nature can be. Fresh pomegranate looking like a bowl of precious jewels – perfect for her theme!

@diannewenz

I want to go to this party, don’t you? Dianne’s recipe for buffalo cauliflower bites can be found on her blog, send it to people to get them to make this for your parties!

Day 25 – Cook for your best friend

Wing it Vegan

River has a confession to make, one that might make you very shocked…she doesn’t like pumpkin spice! However, apparently pumpkin is still good, so she’s made these pumpkin-vanilla cupcakes for two…and it does actually sound (and look) like a great combo! Just look at that crispy top.

Things 2 Eat

Moon cooked for her Mr, whose favourite food is Mac and Cheese. Good choice, Mr Moon! This is her butternut squash mac and cheese, with some kale thrown in for good measure. Mmmm!

@veg_domesticgoddess

Kira’s best friend is a picky omnivore – but that’s no problem when you can make food as tasty as this! She hosted a nacho party, which is possibly the best kind of party, featuring ancho lentil tacos and cashew queso. Oh yes!

Day 26 – Showstopper Dessert

@meettheshannons

I think we have discovered a vegan magician here, because this is none other than a vegan pumpkin spice souffle! Who says you have to miss out when you’re vegan? Not us!

Seitan Beats Your Meat

These might be the prettiest cookies I’ve seen. These are Italian Rainbow Cookies, and they are very showstopping. Look at the beautiful colours! And the chocolate!

@zuckerbaby.1

The very modest zuckerbaby claims not to be very good at decorating cakes, but this showstopping dessert proves the opposite! It comes from her very own book, and has two types of ginger in it!

Day 27 – Meals for the young (at heart)

Southern Food Fiend

Katie, like many of us, associates peanut butter and jam with her childhood. Now, you can have it in a sandwich or…make it into blondies! Her baking looks delicious, and she has a link to the Isa recipe she followed, too!

Banana Curl, Vegan Girl

Laura’s theme this month has been “Magical Unicorn Rainbow Party” which is as fun as it sounds! She has had some really great posts, covering some issues that need to be talked about too. Today, she made a bento box featuring rainbows and unicorns – how happy would you be if this was your lunch?!

@happylittlelunch

All of Happy Little Lunch’s posts are suitable for the young – at heart or not! – and getting closer to Halloween they’re getting spookier and spookier…and even more fun, if that’s possible!

Day 28 – Brunch

@vegan_a_piece_of_cake

Hotel food? Good or no? Well, would you believe it, this breakfast comes from a budget hotel chain in the UK! It certainly looks tasty enough – complete with vegan sausages, hash browns, and beans. Perfect!

My Apologies for the Novel

Julie made “quinoasage” which I don’t know how to pronounce, and potato tofu scramble. It sounds really good, and she did a little drawing of it too – she’s drawn a picture of each of her meals this month!

@ambereatsveg

Absolutely in AWE of Amber’s savoury french toast, it’s made with leftover garlic soup! Garlicky french toast! The best.

Day 29 – History: What would you cook for your favourite historical figure?

Coastal Vegan

Clare writes about Abraham Moss, founder of the Metrolink…ah…read her blog to find out why this is a bit of a fabrication! She headed to Manchester to find some pie to feed him – mighty delicious sounding pie too!

Hasta La Vegan

Emil has been doing his own theme this VeganMoFo, recounting his vegan experience of surgery and recovery. Which included this pumpkin cheesecake, because cheesecake is the perfect food to help you feel better!

@whoawren

Lauren had African Peanut stew – which sounds delicious enough on it’s own, but take a closer look and you can see some gorgeous fresh bread in the background…now that makes it even better!

Day 30 – Holiday Test Run

@jasmineteainmyveins

Sara describes this as “Super 70s hippie food” but I would like it whatever era I’m in! Potato and spinach casserole – baked to perfection – perfect for a nice filling holiday meal!

@theveganbirdie

How would you like some omelette? Vegan, of course, though Ekta describes this mushroom and red pepper frittata as resembling non-vegan omelette “perfectly” – and it’d be a great food to convert people to veganism!

@veganstride

This isn’t holiday themed, but who cares? It’s a mac and cheese burger! It’s vegan! It’s brilliant!

Day 31 – Halloween!

Spabettie

You could have SO MUCH fun creating these “pepper jacks” – making faces, carving pictures, whatever you’re skilled enough to do! Like a mini pumpkin – and stuffed with delicious food too! What more could you want for Halloween?

@mrs.spaetzle

Need to use up some leftover pumpkin? No worries, Mrs Spaetzle is here to help! Here’s some pumpkin pasta, I quote, “more pumpkin than pasta” – perfect for any on sale pumpkins!

@rosamiex

You need some sweet treats to complete your Halloween, and Rosie has you covered with these chocolate cornflake cakes. Click through to her profile to see the spooky sweets she topped them with!

That’s it from our final week’s roundup! Thank you all so much for taking part this year, and don’t forget our monthly MiniMoFo challenges will be continuing soon…stay tuned for what’s next!
