I think my favorite vegan blog posts are the ones about travel because I have a serious case of wanderlust and they are always really helpful when planning a trip. One of the best vegan travel blogs out there is Vegan Miam who always has the most stunning pics of locations and food. The last few posts have made me really want to go to Spain with her!VeganMiam

Of course I love recipes too, especially ones with exhaustive guides for things like jalapeno poppers. I am kind of obsessed with poppers but I’ve never tried to make them. After reading The Illustrated Guide to Vegan Delight I’m sure I could tackle them. There is even a warning  illustration for what happens when you don’t have the seams facing up.sad pepper

I love all kinds of pepper so I was excited to see another post today all about Hatch Peppers from Kim Cooks Veg 4U. They froze 80 bags of Hatch chilies so I can’t wait to read about all the different ways they are going to use them!hatch

I also love to learn about cuisines that I don’t know anything about. Madeline.teacup has been focusing on pre-columbian recipes and her picture today for Inca chilcano de pirana looks just beautiful. I love that she used Kittee‘s chichpea fish from Papa Tofu Love Ethiopian for the pirana!madeline

There are so many fabulous simple recipes on the internet too, that I never would have thought of myself, like single serve brownies, and obviously, the vegan ones make me the happiest. I also love the combination chocolate and peanut butter so this recipe for Peanut Butter and Jelly Bars from an unrefined vegan definitely caught my eye.chocobars1picmonkeyBut, I have to admit that my most favorite favorite part of vegan blogs and especially veganmofo is the amount of nerdy-ness and geeky-ness that goes down. As a die hard Star Trek fan I was pretty stoked to see Earl Grey Truffles from Saving the World One Bite at a Time especially since there was a diatribe about chocolate from Deanna Troi AND a video clip of the one and only Captain Picard. If you haven’t been lucky enough to try Capital City Bakery‘s delicious treats, part of me thinks that your better off for never having known true bliss. I first met the owner, Kristen, through putting on bake sales in Austin. Not only would Kristen always donate a generous amount of cupcakes, but, they were also the most tasty and the most beautiful of all the cupcakes at the sale. She made it super easy to raise a ton of money for all sorts of good causes. When she started her own bakery trailer I couldn’t have been more thrilled because this meant access ALL THE TIME. The trailer has been such a success that she has plans to open a full on brick and mortar store and they are going to have Sunday brunch too! There is even a kickstarter which you should totally contribute too (one of the prize packages is specifically for out of towners) or watch the movie to learn all about it and see how cute she is! I can’t tell you how excited I am for this new cookbook Vegan Eats World from Terry Hope Romero. Last year I attempted to be a recipe tester but I was injured and I honestly couldn’t do anything. I would look at the recipes and read about them in the tester forum and think someday, they will be mine. Oh yes, they will be mine. I did convince my non-cooking partner to tackle the seitan pho and it was the best I’ve ever had. And pho is one of my most favorite foods, I search it out. Her coriander spiced seitan is the best I’ve ever tried and the broth was so richly spiced and delicious that I can still remember it a year later. 

Terry knows food. The Veganomicon, written by Terry & Isa came out quite a few years ago now and it is still often praised as the greatest vegan cookbook of all time. I have made countless recipes from it, the book taught me how to cook. Then Viva Vegan came and my mind was blown again if you have it and you haven’t made the tempeh pie, seriously do it tonight. So I have been waiting for this one since the moment it was announced.

I think Terry is the perfect person to try and tackle…um…the whole world because she is such a nerd. She really gets into the critical elements of the different cuisines, you will learn how to make preserved lemons, cabbage kimchi, dukkah, and other condiments. She also has tons of building blocks like lemon and olive chikpea seitan and baked tofu. Then there are the recipes from potato pierogi with fried onions to chickpea crepes to veggie bulgogi or golden tandoori tofu all of the best cuisines are represented. You can tell from reading the recipes that she loves to research and make everything as authentic as possible but usually with a vegan twist. She isn’t just veganizing recipes but often reimagining them combining the best ingredients with vegan cooking techniques. A few weeks ago Isa posted her Tofu Scramble Bahn Mi, and I looked at it and thought, this is what vegan food should be like.

I said I would could write this giveaway ’cause I can gush about Terry all day long, but I know you want this book as much as I do so instead I will end it here with the giveaway:

Tuesday Roundup – Cookbook Fever

Reading about all the cookbooks that have recently come out, especially Artisan Vegan Cheese, Vegan Sandwiches Save the Day, and Vegan Eats World, has overwhelmed my deep need for more books. Just when you think you can’t possibly desire another one…you need another one! I know you all feel the same because there have been a ton of cookbook posts this month.

The Taste Space just got her copy of Vegan Eats World which came out officially today, and showed us these beautiful lentils on top of some home made injera. I want to make every recipe in this book, and she has pictures of a bunch of the other ones!

Cooking the Vegan Books has been going through her pantry and using ingredients she bought, and then forgot about, this month. It’s been really fun to read her journey. I am sure many of us are guilty of planning meals that we never end up following through on. She found some Bola Roja Beans and decided to make them in the Colombian style recipe from Terry Hope Romero’s other beloved book Viva Vegan. Alongside fried plantains and garlic cilantro rice it looked like the perfect meal.

I am totally with Vegan Soul Power on not being a big fan of salad…unless they are from Isa’s Appetite for Reduction. I haven’t tried the green goddess dressing but I am sold on working it into my rotation after reading her post.Of course not all recipes I saw today were from Terry & Isa! The Vegan Cookbook Aficionado has her own authentic Canadian recipe for Nanaimo that look just fantastic. The perfect Halloween treat!

I have also been looking for a great caramel corn recipe for a long time and Peaceful Table has one that sounds like just the thing.

If you are looking for a savory pumpkin recipe post jack-o-lantern carving I think this pumpkin hummus from Dreena Burton – the queen of hummus- would be the ideal snack.

And finally my favorite post of the day; the obligatory cat post. Today’s come from Cupcake Kitteh who did a round-up of her kittens getting involved with her food photography, check out the whole post!

So I have been having a rough time recently but luckily there is are a lot of high-spirited vegan blogs out there to cheer me up. These oatmeal blinis from “Including Cake” look like the perfect breakfast to fill someone’s day with happiness.

Or if just the idea of autumn gets you excited maybe these Butternut Squash Doughnuts from mama et de bébé hawk might be the perfect thing.

Nothing says love like being wrapped up like a dumpling and these beauties from V.K. Rees were like a culinary hug.

 Tacos + Whisky are a good way to jump on the happy train and these unpictured Bourban Seitan Tacos from Winged Snail sound totally delicious.

Southern Comfort food is so reassuring that it has comfort right in the title. These Crispy Crunchy Stuffed Tofu Pockets adapted from one of the happiest zines in the world Papa Tofu and cooked up with greens and grits by one of my favorite bloggers, Eating Appalachia was like veganmofo². I’ve wanted for years to try that recipe and Jes’s rendition looks like my ideal meal.

One surefire way to bolster your spirits is to eat a great quantity of chocolate which means Chocolate Covered Katie must be one of the happiest people in the world. She did a roundup of her Halloween candy recipes and I want to make them all. Especially these Chocolate Peanut Butter Eggs.

And then if all that doesn’t work to brighten your spirits, there are always pictures of cute animals. Try and not have your heart warmed by these Turkey’s eating a Thanksgiving dinner at Woodstock Farm Animal Sanctuary’s Thanksliving feast. “This Vegan Life“‘s post made me wish I could have gone too. Someday.

I also love posts about blogger’s animal companions. Ailsah the cat is adorable and inspiring the “Road to the PhD” to always remember to consider all the animals in the world. This post also made me question if I could ever hug a kangaroo.

This year we only have one Italian participating in VeganMoFo, Quando spuntano i papaveri but most vegans I know are always swooning over pizzas and tomatoes still warm from the summer sun. I would even make a wager that many of them have a pot of basil growing somewhere. So today’s roundup brings you Italian favorites, Americanized and veganized in most cases. There is no need to veganize this plate of olives, though, that Vegan Eats and Treats recently served at her Mediterranean feast. I could stare at it all day. 

Nothing goes better with olives than the some herbed fermented cashew cheese and From Kirsten’s Kitchen to Yours has a beautiful looking recipe.

Summer squash, like all squashes, originally came from the Americas but, like the tomato, I always think of them when I’m craving Italian food in the summer because it was the Italians who cultivated the zucchini. These rosti’s with roasted apple salad are from a German blogger, The Vegan Way, and they look very appetizing.

Next, one of my favorite vegan artist bloggers My Zoetrope finally had success with making sweet potato gnocchi. They look beautiful and delicious swirled with the greens and sage butter sauce.

Keepin’ it Kind has a recipe for some roasted tomatoes and it also has the link to the recipe for the beautiful chickpea flatbreads she served under the tomatoes along with some pesto.

If beautiful food is what you are looking for check out this Roasted Garlic Pizza with caramelized onions and figs. I want to eat every piece but Vegan Road didn’t even save me one. 

And it wouldn’t be veganmofo without a gratuitous picture of a cat. My sister once told me that it’s the easiest way you can tell if a blogger is vegan, I guess we are the only ones that always post pictures of our animal companions with our recipes. I couldn’t resist this shot from Crack the Plate, it’s adorable.

It is my belief that if all the veganmofo participants in all the land got together we could make the most fabulous tacos. First we could get My Whole Deal to start pressing some homemade corn tortillas because homemade always wins and then the xGFx-ers could join the fun. Plus she’s got that salsa book which will totally come in handy.

The first thing I’d add into our tacos would me X Means No Onions‘ version of mushroom fajitas because they sound delicious and they also can feed a ton and there are like 600 of us. Plus it uses criminal mushrooms, I can just hear the Fiona Apple song. 

I like to have greens in my tacos because eating greens makes me feel like I’m a super healthy person and I can eat all the ice cream I want. So I think this butternut and kale saute with pecans from Good Good Things might be the perfect tasty element.

If all those fibrous greens are a little too much for your palate another way to enjoy them is Fo Reals Mom‘s Kale Pesto. The recipe has sunflower seeds, miso, and nooch so I think it would be a fantastic addition to any taco. Maybe I’ll try it!

A lot of people love a creamy melty cheesy element on their tacos, especially for those American-style smart ground/lettuce/tomato versions and I think Vegan Nom Nom‘s Melty Delicious Vegan Cheese looks like just the thing. It uses agar AND tapioca starch so it’s firm  and sliceable or melty if you heat it up. She used it for nachos and they look like something I could eat all day.

There’s No Fu like Tofu roasted some poblanos and I think roasted peppers -especially with a cheesy sauce- make tacos amazing so we’d make sure to add those as well. 

I need to have something a little crunchy or I’m just a little bit unsatisfied so I think these roasted pepitas from Vegan Fazool would add a bit of snap to the taco. She says the trick is to warm them up in the oven to dry them out before you roast them. I’ll have to try it because my pepitas never turn out very crunchy.

I love having a sweet element with my dinner and I think this Warm Beet and Blood Orange Salad from HipsterFood would be a great side dish to any taco. Although now that I think about it, that’s a lot of kale for one meal. Whatever, we’re all eating vegan, we can handle it.

And you know what, if this is all getting too complicated maybe we should just go to Mexican Radio in Hudson New York. The Food Duo‘s post about it makes it seem like the ideal place for a fiesta, they have wonderful artwork, lots of hot sauce, good beer, and all sorts of vegan dishes like carne asada fries that you can’t find just anywhere. For me, ethics and environmental concerns aside, I can’t imagine anything more limited than being on the paleo plan. I’ll enjoy my poppyseed bagel, thanks, and don’t forget the Thanksgiving stuffing or Chicago style deep dish pizza

When I first started making homemade seitan I couldn’t get it right until someone told me to check out Bob’s Red Mill brand Vital Wheat Gluten. It truly made the difference, now I am completely free of any sausage making fear.

Bob’s Red Mill also has some of the best gluten free flours on the market. I know their all-purpose blend is the most popular one out there. Buying all those different flours can be expensive though, so I am sure you are all going to be stoked that Bob’s is giving away four 25 dollar giftcards! I think my favorite part of this year’s VeganMoFo has been following people’s themes through the month, congratulations to everyone who has stuck with it!

One of the most informative and hunger inducing blogs you will probably read this month is Meet the Wikos. Erinwiko has been doing an amazingly thorough job of chronicling her adventures in cooking up vegan international street food. I have learned a lot and started to really crave Okonomiyaki even though I have never tried it!Even though I mentioned Oh, LadyCakes in another round-up I have to bring up her fabulous blog again because I am so impressed that she has stuck with her pumpkin theme for this entire month! From Pumpkin chocolate chip cookie bars to Spicy pumpkin chili to today’s Pumpkin stuffed crêpes everything she has covered pumpkin from every angle and made it all look amazing! Just try and act like you don’t want this Pumpkin Cream Cheese Galette.vegan.in.brighton has been at it again with a cookbook challenge where she picks out book titles out of a hat although yesterday instead of the random number generator to pick which recipe she used her official husband generator and he chose the Veganomicon’s Banana Nut Waffles. They look so good that I want to cry about how I don’t have a waffle iron.Craft Aftermath has been doing a cookbook challenge too and I have been enjoying it because she has a lot of cookbooks that I don’t! My love of olives is boundless so I can’t wait to make her olive and walnut spread which looked beautiful to me!That Pain in the Ass Vegan has one of the most inspiring and hilarious themes out there because she is basing ever recipe of the show “True Blood”. Since the show takes place in the Louisiana all the food is southern comfort but then also inspired by the characters and episodes so she has dishes like Terry’s Red Eye Gravy n’ Grits, Sam’s Shapeshifter Ham, and Jesus Saves Chili. Right now I really want to sink my teeth into Sheriff Bellefleur’s Beignets.Stick a fork in me, I’m done!
