April MiniMoFo Roundup
In April we asked you what was in season, and as usual, you didn’t disappoint! Let’s take a closer look at you MiniMoFo offerings for April.
Feast your eyes on these fancy potato waffles and seasonal asparagus – perfect for an Easter brunch!
And here are some more waffles from Mrs S – these ones are flavoured with seasonal wild garlic. You can find the recipe in the comments on this post.
Emma has gone for a light, zesty lemon drizzle cake, which is perhaps the perfect cake for Spring. We’ll even let her off for choosing a fruit which isn’t in season in the UK!
What do bilimbe, mamey sapote, and jaboticaba have in common? They’re all in season in the Florida Keys! Thanks to Jen for introducing us to these fruits – check out her blog and youtube channel if you want to know what they are and what she did with them!
Emily whipped up this fava bean risotto, which used fava beans in three different ways. Intrigued? Check out the details on Instagram!
MiniMoFo-regular Julie did her research and made an asparagus, mushroom and parsnip dish. It was her first time trying parsnips! See what she thought over on her blog.
Even more parsnips from Sarah! They look cooked to perfection.
Over on Instagram, Amey teased us with this seasonal wonder. Do you know what it is?
Almonds! Apparently you can eat the whole husk!
For anyone who celebrates Easter, there’s nothing more seasonal than chocolate! Jenny selflessly reviewed these five different bars, just for you.
This is a lot of kale! We would happily help Janet tackle this gigantic kale salad.
Here’s more kale from Juli – and it’s been massaged! Veganism truly is a cruelty-free lifestyle, even our plants get the royal treatment. Find out more over on Juli’s Instagram!
And finally, MoFo star Susan wins MiniMoFo by putting a vegan creme egg inside a hot cross bun and putting it in the panini press. We’ll all be doing this next year!
Thank you so much to everyone who participated – what a talented bunch! Keep an eye out for May’s MiniMoFo announcement coming soon!
