When Paul contacted me about giving away some copies of his e-book, I was a little nervous. I never want to give away something to you guys that I wouldn’t be 100% excited to get myself, and self-published e-books can be…not good. Luckily for me and you, all you have to do is go over to the site and you will see a clean, fancy layout with beautiful photos, humor, and links to many positive reviews. Anyone who knows me knows that I have a lot of vegan cookbooks and i’m not shy about saying what I do and don’t like the books I buy to have.

Eat Awesome is more of a really nice zine that a book (and ya’ll know I love zines so I mean that positively), there are only about 20 recipes and the recipes are loose with the directions and measurements (which is fine by me since I will do anything to avoid washing a measuring spoon, that’s what I have eyeballs for). There’s also a decent-sized FAQ in the front, along with some pantry staple suggestions. At the end of the book there are over a dozen meal suggestions, or really short recipes (this is in addition to the other twenty). There’s also a zombie reference and a picture of a nut sack (for soaking nuts, you pervs), what more could you want? If you want some super-fancy-pants photos, you also get those. Win/win/win! If you want to check out some of the photos and one of the recipes, they’re right on the front page.

Overall, you can tell that a lot of effort and love went into making this book. It’s focused on using whole foods and is gluten-free, so if that sounds like a good deal to you, keep reading!

  1. I simply love cashews, so much so that I worry that I will become allergic because I eat so many! They’re simply divine to make into cashew milk, and the cashew cheeses are, hands down, the best.

  5. I love roasted chestnuts! They’re only available during Thanksgiving/Xmas time but they are worth the wait. I love the taste and texture. One of my most memorable experiences was when I went to NYC during Xmas time and bought roasted chestnuts from the street vendors in the cold. They melted away the cold and kept me warm as I was walking through the city. They were worth the 5 bucks I paid.

  8. PECANS!!! I am originally from Louisiana and there the pecan is used in a variety of ways. I love the combination of sweet potatoes casserole with candied pecans. Grind the pecans to then make a coating for tofu or seitan. Then sauté or bake. There’s pecan pralines. Praline and cream ice cream (of which both can be made vegan). Pecans in rice. Pecan pie, turtles. In salads. There are endless possibilities. Oh pecan butter that you can use to make cookies, a sauce for noodles, and a dipping sauce. What a lovely nut!

  10. Almonds! Love them in just about everything: baked goods, fried rice, pesto… The possibilities are endless! Reminds me that I need to try the recipe for vegan “Almond Joy” that discovered lately, yummm!

  11. I dunno if you are going to count this, as my favorite nut is sunflower seed. I guess that is a nut, yes?

    I started eating them in high school (WAY back when Star Wars first came out….do the math…)
    And would eat them instead of meat. Cause my mom would always make steak (um, no, I don’t like…..)

    I ate them while I studied too! And now as an oldester…..(do the math), I eat them when I’m reading on my Kindle….. Have a good one! <3 Gaileee

  12. I made butternut squash lasagna with caramelized onions and cashew cream sauce with fresh sage and freshly grated nutmeg
    YUM even my omnivore husband loved it

  13. Any and all! – but for this one choice … I gotta say almond. Just starting out with this new vegan lifestyle and trying to learn new ways to cook and eat… It is not going as easy as I had hoped. This book might be the inspiration to keep me on track.

  14. Almonds because they are so versatile!! I use them in my morning smoothie along with bananas, coconut water, vanilla and ice. It’s amazing!!

  16. I love nuts, pretty much all of them, and they all get to be called my favorites, each for a specific reason. If I had to pick one now, I’d say pistachios, but not any old ones, no… After spending time in Iran, I’ve become quite picky when it comes to pistachios, and only fresh Iranian pistachios will do!

  17. Coconut 🙂 seriously, this is the hardest question – I love all nuts, and all the amazing things that you can cook with them! I can’t choose one, but I always have a stock of almonds and cashews.

  20. I LOVE NUTS!! They really are a discovery since going vegan. Handful of raw almonds as a snack, cashews toasted in stir-fries and blended up into silky creams and cheeses, walnuts to add a crunchy contrast in salads of all varieties..and in brownies and cookies too, pistachios and pine nuts for pesto and pasta and for studding grain salads with….the options are endless,, and these are just my most used nuts!

  21. I have to pick just one?? I think my favourite for munching are probably pistachios, but for chucking into a cooked dish it has to be cashews – yum! Oh and walnuts for cake lol

  25. Looks like it is a pretty popular choice, but I love cashews. Great on their own by the handful, wonderful in curries, great as a butter, milk, cheese base, and on and on and on. Yum.

  26. Pecans. In oatmeal and on just about any dessert. They just have the best flavor.

    Hazelnuts from Freddy Guy (in Oregon) are a revelation. They just have so much flavor.

    Macadamia and cashew tie for third. And I’m one of those weirdos who really digs Brazil nuts. Yum.

  27. right now, I’m loving peanut…specifically, in butter form. A little spoonful is the best snack just before bed when you are hungry but not that hungry.

  28. Not sure how to narrow it down to one, but I can tell you I DO love pecans, almonds, macadamias, pistachios, walnuts, cashews.. heck’s I LOVE ‘EM ALL! I recently bought raw pili nuts- not yet tried, but am excited to see what they are like!

  29. Macadamia, for sure! But I’m having second thoughts after my friend informed me this morning that a cup of macadamias = 987 calories! Eeek! He uses a whole cup in his prized vegan Chex Mix. Oh well.
