Week 1 Roundup!

The first official week of VeganMoFo 2019 is over! Ok, week and a bit, but we figured we’d include it all in one round-up. We’ve already seen some amazing food and got glimpses into your vegan lives, and are looking forward to seeing more over the next few weeks! Some of you are following the prompts, and some are doing your own thing, and both are perfect! Here are some of the highlights…

Day 1: Introduce Yourself

One Raw Bite

Jennifer has been doing VeganMoFo for the past four years, and this years theme is all about her CSA box. Don’t know what that is? Head to her blog for a handy guide!

Herbivore’s Heaven

VeganMoFo’s very own Jenny has a Japanese theme to her MoFo-ing this year. Check out her blog to find out how creme brulee fits into it!

Caroline’s theme for the month is books and reading…and food and drink to go with that. Sounds pretty perfect right? She starts off with this chocolate chip marzipan cookie – yum!

Day 2: Kitchen Tour

A blog full of lunch ideas? You’ll never run out of things to make again! This is a 3 tier bento box, and you can find the recipes for all the goodies on the blog link above!

My Apologies for the Novel

Julie’s blog is pretty great, because every post ends with a cat picture! So it’s no surprise to find these cat oven mitts and pot holders in her kitchen…but aren’t they cute?

Day 3: Biscuits/Cookies

These cookies are chocolate mocha flavour, and look so simple to make! Just combine the ingredients and go. Yum!

The Singular Vegan

Being very “Bake-Off” themed today and using a Paul Hollywood recipe! These gingernut biscuits were veganised from his recipe, and sound perfect!

Here at VeganMoFo, we don’t mind if your food is bought or made – so long as it’s vegan! And this “chocodoodle” Mike bought looks and sounds amazing!

Day 4: Cake!

Hands up who loves a good picnic? You’ll never have to worry about what to take again, if you follow Vegan Picnics! This is a cranberry bliss bar, vegan and gluten free, and lovely for a picnic!

Chocolate cake, whipped cream, pomegranates…what’s not to love about this cake?

Rice pudding cake sounds intriguing but delicious! Especially topped with fresh berries and nuts.

Day 5: Pastry

Vegan Ha Ha

This tabbouleh is made with millet, and is perfect for a warm summer day, with herbs and vegetables and preserved lemon for a nice tang!

Downright Vegan

Inspired by pastries seen in a bakery, these are similar to mille-feuille, but without icing on the top, and look mouth wateringly good!

Vegan Beckles

Pastry can be savoury too! These are both vegan and gluten free, and packed full of melty cheese, soft potatoes, and herbed onions. Delicious!

Day 6: Bread

With a bread prompt, you have to make sandwiches, right? This is an almond butter sweet potato fluffernuter sandwich…ok, how cool does that sound?

Oooh, bagels! And homemade at that. You can’t get much better than homemade bagels, can you?

Holly made a beautiful looking bento box, featuring a gluten free vegan naan bread, using a recipe from the lovely Vegan Richa!

Day 7: Technical Challenge – Quiche

Vegans Need Sauce

Mmm, how creamy and tasty does this quiche look? A tofu base, with spinach, onion, and garlic – simple flavours but perfect for quiche!

Sarah made quiche with potatoes, onions, mushrooms & rosemary – and all those flavours sound perfect together.

Vegan Raptor is doing a Star Wars themed MoFo…full of great puns like this “Ham Solo”! Every morning is a guessing game…can you guess what each meal is referring to?

Day 8: Afternoon Tea

Just Bloggs Vegan

Would you look at this spread! Three types of sandwich on the bottom layer, coronation chickpea vol-au-vents in the middle, and scones with homemade jam and creme fraiche. I love the amount of effort that went into this, and would definitely be happy having it at a nice cafe!

Go Vegga

Who wouldn’t want lemon drizzle cake served at afternoon tea? This was baked for a birthday – and I bet it was well recieved!

Sarra has absolutely mastered making biscuits, and if she made these for Mary Berry? She’d be won over in an instant, I’m sure!

Day 9: Showstopper

Gonna Go Walk the Dogs

Four words. Vegan Angel Food Cake. Amazing! Using the magic of aquafaba – the liquid from cooking chickpeas – this light and fluffy cake was veganised, and looks so perfect!

Angela says she’s “not very good at showstoppers” but I firmly disagree – this looks amazing! The recipe is from Chloe’s Vegan Desserts and looks like a must-make.
