The first month of 2019 is over! We asked you your advice on beating the blues for this MiniMoFo – and you definitely delivered.
Nina has been cooking so much good food this month – check out her instagram for more! This is a frugal meal too – after using half a can of coconut cream for cupcakes, the other half went into this delicious soup.
Kira took on a project and made vegan pho – several steps and hours in the kitchen, but perfect to keep yourself warm and enjoying yourself on these cold days!
Start the day with a good breakfast, and you’re on track to a wonderful blues-busting day! This southwest cauliflower scramble is just one of Amber’s creations this month, and they all look delicious.
Jen took the “blues” prompt literally and made a granola smoothie bowl using blue spirulina, which gives it the beautiful blue colour! Featuring fresh fruit and homemade granola – definitely looks lovely!
Kirsty made stuffed carnival squash with veggies and rice, and a walnut dijon cream dressing – how good does that dressing sound?
Jenny isn’t feeling the blues herself this January, but kindly for those who are, she provided us with pictures of these gorgeous waffles from Puro in Prague. With baked apples, hazelnuts, maple syrup, and whipped cream – they’d definitely do the job.
Keeping on the sweet theme, Susan had some cheering up with friends and milkshakes – these are butterscotch, and strawberry flavours – yum! Perfect blues busting for the Brisbane summer.
Back to savoury, and a lovely green pasta meal – with peas and preserved winter garlic, yum!
One sure way to beat the blues is to go for deep fried, delicious food. Deep fried pizza, chips, battered sausages, cheesy garlic bread…need I say more?
Some great advice from Blueberries on beating the winter blues – keep warm and cosy and drink delicious chai!
