Fourth Week Round Up 2016

Fourth Week Round Up 2016

This week we have been as thankful as ever for this wonderful vegan community:  thank you all for continuing to spread the vegan word and giving us serious food envy at every opportunity. This is the fourth, but not final, round up:  we’ve got three days of Holiday themed posts still to go, so keep on posting, reading and commenting!

Week four was all about Memories and Traditions, and you dedicated MoFo’ers came through with an exciting array of dishes, and wonderful stories connected to them.  Have a look at some of our favourites from this week, and remember to check out what the other members of our community have been up to.

Day 21:  What’s your favourite food memory?

Brand New Vegan

Anyone who enjoyed (or even just tolerated) devilled eggs in their childhood will be delighted by this vegan update on the classic.  Is anyone else really keen to try potato hummus too?

ru-w4-1

Neat & Nutritious

Stephanie recreates the simplicity and comfort of family meals with this “tuna” noodle casserole.  Doesn’t it look good?

ru-w4-2

L’éphémère quotidienneté des repas

I wish these chocolate donuts were part of my childhood.  And my adult life.  Wow!

ru-w4-11

Day 22:  Silly food – what are some silly food memories/traditions that you have?

Vegful Life

Sausage cheese balls just sound silly and fun, don’t they?  Well, they also look delicious!

ru-w4-8

Lisa’s Project Vegan

Lisa’s 4 year old son once decided he wanted to make turkey cookies for their neighbours to eat at Thanksgiving, rather than an actual turkey.  A great sentiment, and a really cute little biscuit!

ru-w4-5

@odilejp

For her silly memory, Odile recreated the grilled cheese sandwiches her dad used to make for her and drown in maple syrup.  Can she convince you to try this crazy combination?

ru-w4-6

Day 23:  Autumn/Fall traditions (or Spring if you’re in the Southern Hemisphere)

Tea & Sympatico

How do you like them apples?  Caroline teaches us how to roast them to perfection to make the most of the autumnal produce.  She’s been blogging about breakfast, so if you’re looking for inspiration, head her way.

ru-w4-7

Walks, Talks & Eats

Autumnal dishes aren’t all about the fruit and veg for Emma.  Maybe it’s a British thing, but there’s definitely something special about cheese and onions pasties in the cold weather!

ru-w4-10

@rosamiex

When you check out Rosie’s Instagram feed, you will love her crockery as much as her food!  She’s giving good old Brussels sprouts a chance to shine in this autumnal dish.

ru-w4-12

Day 24:  Thanksgiving!

@rubbercowgirl

Getting the day started in style with these cinnamon rolls for breakast.

ru-w4-14

@mrs.spaetzle

A colourful and cruelty-free plate from Mrs S!

ru-w4-9

@diannewenz

We’re extremely thankful for Dianne’s Instagram feed, and jealous of her lucky family and friends.  This is only about half of what she prepared for their feast!  PS. Check out her Thanksgiving cheese platter too.

ru-w4-13

Day 25:  Vegan memories – what was your first, or most memorable, vegan meal?

@zuckerbaby.1

Zuckerbaby’s mac’n’cheese obsession started in her early vegan days.  She’s now progressed to this version consisting of caramelised onions, mushrooms and smoked paprika breadcrumbs.

ru-w4-16

@emmholmes

Yep, nanaimo bars would convince me to stick with this vegan lark too!

ru-w4-15

Green Gourmet Giraffe

Like many of us, Johanna has spent a lifetime eating muesli, from shop-bought packets to hotel breakfast buffets and finally homemade varieties.  Check out her recipe for this banana and maca muesli.

ru-w4-18

Day 26:  Show us your favourite cookbooks!

@kath_v_

Not a bad stack of favourites here from Kath.  Unsurprisingly, there was a lot of love for Isa on display today.

ru-w4-21

@cocoamandyk

All dessert books?  We like your style!

ru-w4-20

Veggie Products Review

And on a different note, the good people at Veggie Product Reviews have a sneak peek at a new Vegg product.  It’s breakfasty, it’s microwaveable and it gets an A grade from them!

ru-w4-19

Day 27:  Changed opinion – what is a food you used to hate, but now don’t?

@chunkyonchia

Looking at this dish it’s hard to believe that anyone could ever have hated tofu.  Just look at it!

ru-w4-22

@aufziehvoefelchen

Cauliflower was a popular choice today.  Julia is gradually coming round to it, especially when it’s roasted and served with this tasty miso-tahini sauce!

ru-w4-24

@bigtentvegan

Finishing on a slightly different note, here’s something that nobody in the world has ever hated:  three desserts on one plate!  Yum!

ru-w4-25

Week Three Round Up 2016

Week Three Round Up 2016

 @HappyLittleLunch

Week three was all about ROYGBIV, and boy did you get creative!

Monday, November 14th: Monochrome

@pepajobo
If you’re going to go monochrome, purple is a lovely way to do it!

@clare.burgess
And this all green sandwich has such a serene (and most certainly beautiful) quality, doesn’t it?

@myzoetropeeats
This Raspberry Chia Jam is so lovely I want it as a paint color. (And also in my mouth! The jam. Not the paint.)

Tuesday, November 15th: Multicolor

@danielle.marie.atkins
I will go to any cookout where there are rainbow veggie kebabs. Invite me, I will show up. Let’s make this happen.

theveganfoodnerd
Pizza is always an excellent opportunity to get in all the colors you can!

@sophigramme
It may not have ALL the colors, but I love the care and style in presentation of this delicious Broccoli “Cheddar” Soup!

Wednesday, November 16th: Complementary Colors

@veggiessavetheday
There is so much going on here! The beautiful contrast of red on green – and there must be a lot of interesting flavor and textural contrast too.

Plant Based Living
The orange and green in this looks so bright and inviting. And this vegan vegetable scampi sounds absolutely delicious!

@lisarturner
These homemade vegan gumdrops look like such a special treat. And those colors!

Thursday, November 17th: A Rare Color

My Apologies for the Novel
Maybe we’d all be happier if we had cheery yellow dinners like this more often!

@whoawren
Lauren didn’t identify any of the colors here as rare, but savory waffles certainly are… by the looks of this they shouldn’t be.

@degroenekeuken
Who cares what color it is, these mushroom and caramelized onion burgers look ah-MAZE-ing!

Friday, November 18th: Greyscale

Deer Run B&B
How amazing do these black and white aquafaba meringues look!? I am blown away!

@dauliflower
Danielle has done an excellent job of highlighting the universal appeal that is a vegan donut.

justbloggs
We would be remiss not to enjoy some lovely, and naturally B&W sushi!sushi-bw1

Saturday, November 19th: Goth Day

@veganistamama
I love the commitment to goth in these tamales: black beans, blue cornmeal, and blueberry mole.

@rubbercowgirl
This purple and blue curry is seriously moody and darkly beautiful.

@nicolearciello
I feel like there is something inherently goth about coffee, and these Coffee Chip Cookies fill the depths of my dark, cold, soul with a tiny flame of happiness. Or something. Whatever.

Sunday, November 20th: It’s Easy Being Green

@emmholmess
Green + smoothie bowl? It was meant to be. Em does an amazing job with this one!

Chunky on Chia
Raw Chocolate Mint Ice Cream Cake? Uh, YES.IMG_20160310_093954

@tessalita
Kale chips! Because, vegan. (Also because delicious.)

Now we’re getting all ready for the holidays in Week 4! Food memories and traditions are on deck!

Second Week Roundup 2016

Second Week Roundup 2016

Well, that’s two weeks of VeganMoFo done – are you enjoying it? This week has been amazing in terms of the great food and stories we’ve seen and heard shared by you guys! It’s been wonderful reading about food from your hometowns, and food from all around the world too, in International Week.

Next week is Rainbow Week and we’re looking to see plenty of colourful foods in the coming days.

Below are a few of this week’s wonderful dishes and posts, be sure to check them out, and come back next week for more great food! Meanwhile, don’t forget we are on Twitter, Facebook, and Instagram, and we also have a newly released Android App for you to follow some of the great participants this year. We’re also at the tags #vgnmf16 and #veganmofo – don’t forget to tag us!

Day 7: Close to Home – Make a food from your own country, state, or hometown.

Little Vegan Bear

Little Vegan Bear made this delicious sounding Lebanese roasted cauliflower salad. Roasting cauliflower is a wonderful way to prepare this vegetable, and this beautiful looking salad, with pops of colour from pomegranate seeds, promises to be very tasty!

roundup1

Vegga

Kelly shared a post with not only some beautiful photographs of Ireland, but these tasty looking Irish Potato Farls. She pictures them served with vegan butter and jam, but you can also have them as part of a full cooked breakfast – how good does that sound?

roundup2

Tahini Kill

Renée wrote a wonderfully informative post about a food I had never heard about before – the bunya nut. Hailing from South-East Queensland, in Australia, these nuts used to be centre of Aboriginal Australian festivals, and each cone of nuts can weigh up to 10KG! The blog post features suggestions for cooking the nuts, as well as recommended reading on many topics including Australian history.

roundup3

Day 8:  Far Away – If you dug straight down, where would you come out? Make something from that country!

Vegans Need Sauce

Emily found out that if she dug straight threw the earth she’d come out near-ish Madagascar. She made a pumpkin stew with peanuts and an avocado salad – both of which sound lovely!

roundup4

@femmefocale

Shannon also lives the other side of the world to Madagascar! Her pumpkin stew with peanuts is called “Voatavo sy Voanjo” and also looks delicious, served with coconut rice. It’s great to see two different interpretations of the same dish.

roundup5

My Apologies for the Novel

Julie dug straight down and came out in Australia, where she made Fairy bread. Fairy bread is white bread, (vegan) butter, and sprinkles. It is a very cute food! Julie’s blog also features daily cat photos which is always a good thing.

roundup6

Day 9: Something Different – Cook a cuisine you’ve never tried before. Or, one you don’t make often enough.

Gonna Go Walk the Dogs

For a cuisine she’s never cooked before, this Ethiopian meal really looks tasty! Ethiopian cuisine lends itself to veganism well, and a meal may consist of several different dishes served on a bread called “injera”. Janet shares a recipe for berbere sauce, one of the mainstays of Ethiopian cooking, and recommendations for other Ethiopian dishes to make yourself.

roundup7

@things2eat

Moon decided to cook Jewish food, and made an apple-cinnamon kugel. It looks like delicious comfort food – perfect for the winter months!

roundup8

Vegan à Montréal

Babette from Montréal made mücver, which are Turkish zucchini pancakes, traditionally made with dill and parsley, and bound with chickpea flour. She served them with a very spicy harissa, tomato salad, and a cashew-yoghurt sauce. Looks good!

roundup9

Day 10: Fusion Food – Take two cuisines and make them work together.

Tartes and Recreation

German contributor Sonja combined a Bavarian style strudel with an Oriental lentil filling, making a wonderful looking savoury pastry dish filled with lentils, squash, smoked tofu, and spices.

roundup10

justbloggs vegan

This British blogger brings us not one but two ideas for a fusion dish! Moroccan and Indian style ratatouille – or “rats” as it was called by their mother! The Moroccan twist adds apricots, almonds, ras-el-hanout and other Moroccan ingredients, and the Indian version has chilli, cardamom, potatoes and more. A very clever variation on a classic dish.

roundup11

Vegan Pastry School

Jenny from Vegan Pastry School combined two American dishes – gumbo and Cincinnati chilli. Both dishes were new to her – making this fit today’s prompt and yesterdays too! Gumbo and spaghetti is a unique combination that actually looks really good.

roundup12

Day 11: Favourite Cuisine – Where does your  favourite food come from?

Ichiban Vegan

Jess made this super cute looking Japanese omelette with mushrooms to showcase her favourite cuisine. Her blog post includes step-by-step photos showcasing how to make the omelettes (out of tofu!) which is really helpful.

roundup13

@entropyandennui

Nicole enjoys Asian inspired food, such as this General Tso’s Tofu which looks amazing! A good portion of tofu surrounded by broccoli sounds like a delicious meal. More proof that tofu is most certainly not boring!

roundup14

One Raw Bite

Alexa’s favourite cuisine is Japanese food, and she even has a “sushi wishlist” which sounds like a wishlist we should all have! She makes the observation that sushi is a bit like a tiny burrito, which I’d never thought of before but makes a whole lot of sense actually. Sushi is easily vegan friendly which is a great thing!

roundup15

Day 12: Dream Holiday Destination – what would you eat on your dream holiday?

Kittens Gone Lentil

On the brilliantly named blog Kittens Gone Lentil, Susan writes about her love of the city Seattle. The blog post would serve as a wonderful guide to anyone wishing to visit Seattle – featuring brunch, sandwiches, pizza – and best of all, ice cream sandwiches!

19880209553_fa4bb5a5aa_k

Herbivore’s Heaven

Jenny went to Girona in Spain and writes up a great review of her time there. Girona has filming sites from Game of Thrones, apparently, so it’d be great for fantasy fans. The vegan scene looks pretty good too, if this croissant and hot chocolate is anything to go by – vegan croissants are always a bonus!

roundup16

@kuri_thevegan

Kuri would like to go to London on holiday, and of course the UK is famous for afternoon tea – this cup of tea with cucumber sandwiches looks like a lovely afternoon snack!

roundup17

Day 13: Feed the Alien – An alien lands on your doorstep. What are they going to eat?

Tea and Sympatico

Tea and Sympatico has the brilliant idea of finding out where the alien stands on the matter of marmite. This is a divisive issue among humans, and shared opinions with the aliens could be the start of an interplanetary alliance! She makes croissants with her marmite – only taking fifteen minutes to make, so the alien doesn’t go hungry – brilliant!

roundup18

VGNGF – Vegan, Gluten Free, Delicious

Lianne from Germany blogs about sweet potato toast! And this isn’t like avocado toast – where the avocado goes on top of toast, no, here, the sweet potato is the toast. And doesn’t it look good? Topped with avocado, tomatoes, pesto, and cashews, this is definitely one to try.

roundup19

@asynja

I think this would win the alien over with sheer cuteness! Shannon’s heart shaped shortbread cookies with pink frosting look adorable and delicious and I can’t see how any alien could turn them down. Definitely a good idea for good space relations!

First Week Round Up of 2016

First Week Round Up of 2016

Week one of VeganMoFo 2016 is over! Hasn’t that gone quickly? We’ve seen some wonderful food this week and the rest of the month promises to be just as great.

The first weekly theme, for those who are following along, was Treat yourself (and others) and it’s certainly been a treat reading everyone’s posts this week. Below is a selection of our favourite posts from this first week of VeganMoFo 2016.  Make sure you’re following us on social media to see the posts we share and promote on a daily basis too.

Remember you can check out the weekly themes or daily prompts here – although you’re welcome to follow your own theme too! This week’s theme is International Week and we’re fascinated to see all the food from around the world. We’ll be back with a round up at thesame time next week!

Day 1:  What’s your favourite food?

@tofuhead_

Finnish contributor Heini shared this cabbage casserole, which is just perfect for the cold weather some of us are experiencing now.  If you’ve never tried Finnish cuisine, please note that it’s traditionally served with lingonberry jam.

ru-1

Vegan Nom Noms

There were a lot of nachos to drool over at Vegan Nom Noms.  Have you heard of magical potato carrot cheese?  If not, get yourself over there, stat!  Just look how good these are.

ru-1-2

The Offbeat Herbivore

Unsurprisingly, mac and cheese is a big hit in the vegan community and popped up quite a bit on day one.  Shout out to OBH who gave it a fun autumnal twist with her cute pasta shapes.

ru-3

Day 2:  What’s your go-go ‘impress me’ meal?

KZ Cakes

KZ does not mess around when it comes to feeding her nearest and dearest.  When you see the Ethiopian feasts, empanadas and red wine seitan dishes she produces, you’ll be desperately hoping to get an invite!  Gazing lovingly at this cake will have to suffice though…

ru-4

Allotment2Kitchen

Shaheen over at A2K likes to get back to her roots with a sensational Welsh menu when she’s out to impress.  She’s got laverbread, puddings, pies, and even a big tower of Welshcakes all ready to wow her dinner guests – not to mention some ferocious Welsh dragons!

ru-5

Vegans Need Sauce

Homemade gnocchi is always going to impress us.  Over at VNS, this is just a regular weeknight meal – that’s perhaps the most impressive thing of all!

ru-6

Day 3:  What’s your easy cook meal?

Dalia Kinsey

On her youtube channel, Dalia treated to this quick, easy and healthy lemongrass basil tofu stir-fry.  Stir fries were very popular on this day, unsurprisingly!

Rock My Vegan Socks

We can always count on Kimmy for something healthy and delicious, and here is a quick and easy lentil bruschetta…but using baked sweet potatoes instead of toasty bread!  What a great twist!

ru-7

The Divine Ms. K

An easy breakfast is essential for those of us who struggle to get going in the morning.  Here’s a tasty bowl of granola from The Divine Ms. K.  Why not try her seasonal tip and use some pumpkin puree instead of peanut butter in your next batch?

ru-8

Day 4:  Where do you eat when you want someone else to cook for you?

@betsykatemullins

Every vegan probably suffers from falafel fatigue at some point, but this is enough to restore anyone’s faith in that vegan staple!  Betsy shows us all how it’s done by getting this Middle Eastern feast delivered and enjoying it at home in her PJs.

ru-12

Living The Dream

Jen at LTD is one of our busiest MoFo participants:  she’s participating on youtube, Facebook and on her blog, all while running a B&B!  She enjoys the raw vegan special at Food For Thought.  Anyone for lasagna roll-ups?

Vegan Knyquol

North American MoFo’ers may be familiar with the ‘How to order Vegan’ advice from Taco Bell, but if not, Vegan Knyquol has you covered.  This looks quick, convenient and tasty!

ru-10

Day 5:  Tell us what you’re midnight-snacking on!

@inradtaste

Over on Instagram, Loz introduced us to this brilliant idea:  a spoonful of peanut butter and a healthy (?) dose of Choc Shot.  As she says, you don’t need to limit this to midnight snacking!

ru-11

Flicking the Vs

Joey at FtVs is balancing her MoFo duties with student life, so her recipes this month all have a student-friendly, quick and easy theme.  That doesn’t make them any less impressive though, as demonstrated by this sandwich to fuel her late night cramming sessions.

ru-13

@garrickstegner

Here’s an indulgent late night snack from Garrick on Instagram.  We truly live in a magical time with so many vegan ice cream options.  Anyone for cherry choc chip?

ru-14

Day 6:  Comfort food

Blueberry Blossoms

Blueberry Blossoms knows that convenience is key, so she’s relying on some good supermarket finds to feed her:  a tin of soup, a packet of veggie fingers and a toastie filled with smoky cheese.  Quick, easy and comforting!

ru-16

Green Gourmet Giraffe

Carbs are always comforting.  Johanna from GGG showcases her homemade sourdough fruit bread with poppy seeds.  Imagine a slice of this slathered with chocolate and macadamia spread!

ru-17

@oohsarracuda

Sarra found a way to elevate the good old comforting sandwich with these sausage, biscuit and gravy sandwiches.  Good Texan style comfort food!

ru-18
