Hello fellow vegans!  Since I knew I’d have to do this roundup all late night styles, I decided to look at food that is best served in a late night eatery.  Can you imagine it?

For starters, it ain’t no stinkin’ diner without a little soup.  Kzcakestortellini soup and Jovanke’s pumpkin and leek soup caught my eye.  Nothing like a warm bowl of goodness on a chilly night.

 

If you decide “no soup for you”, why not pull a Benes and get the big salad?  Look at this beautiful salad from Becca Williams.  Roasted beets, apples, and cherry tomatoes?  Fork yeah!

 Of course, it’s not a fictitious late night vegan restaurant without that sammich action.  Weekly Vegan Menu is slangin’ cheese steaks.

If you like your late night food smothered in gravy, just check out what Sal  is doing to some mighty fine chickpea cutlets.

You know there’s no such thing as late night eating without a little dessert.  Take a looksie at this caramel apple pie from The Table Fort.  Drool.

Chopped/Vegan: Your Time Starts….Now!

Welcome to a very MOFO edition of Chopped/Vegan. This one is gonna’ be off the hook for so many reasons. (That is, if people even say “off the hook” anymore.) Number one is: it’s Chopped/Vegan and it’s always an amazing time! Also, it’s the Post Punk Kitchen 10 year anniversary and I want to give away prizes like nobody’s business. And finally, this Chopped/Vegan is super duper special because it’s neither an entree round or a dessert round. Yet you can make something savory or sweet. It’s a friggin’ riddle, and I’ll give you a moment to catch up.

OK. Have you guessed what it is?

That’s right, it’s the Chopped/Vegan BRUNCH ROUND! Which means, you can go either savory or sweet here. Heck, you can go BOTH! OK, now lift your jaws up off the floor, sweep up the confetti and compose yourself.

So…before getting boring and going into the rules and stuff, let me announce the mystery basket ingredients. (But you still have to read the rules, ok?)

The four mystery basket ingredient for Chopped/Vegan Brunch are… (drumroll please, but like a synth-pop Depeche Mode kinda drum roll.)

Butternut squash, popcorn, fresh rosemary, and apricot preserves!

Ooh, I think this is gonna be a good one! Now read the rules and then we’ll get to the other fun part…the prizes!

Here’s the deal:
Create a BRUNCH utilizing all four ingredients as little or as much as you want. You can also use any other items in your pantry.

Here’s the rules:
You must use from-scratch, vegan ingredients to the best of your ability (if it’s covered in packaged vegan cheeze and made out of trademarked faux-meat products, sorry but you won’t win.)

Submissions will be judged on perceived taste, creative use of the mystery ingredients and presentation. The photograph is important, so if you’re not a professional photographer, use natural light where you can, try to use a real camera (not a cell phone) and remember, flash on food photos is rarely appealing.

There is no time requirement, so take all the time you need. This competition and the prizes are open to everyone, everywhere!

Here’s how to enter (please read carefully):
On Sunday Oct 14th at 5pm EST, you can begin to post your entries in the comments of this thread. Please don’t post before then because a) you don’t want your ideas stolen do you? and b) it makes it harder to go through when entries are interspersed with questions and other comments.

Your recipe can be posted anywhere, so long as it’s public and everyone can  see it  (your blog, Facebook, FlickR, Geocities, etc.) All entries must be in by 3 PM EST on Monday Oct 15th. Please make sure when you leave your comment, that a valid email is used so that you can be contacted if you win. I will pick the winners on Tuesday October 16th and announce them in a brand new thread.

Your entry must contain 3 things: the title of your dish, a picture of your dish (you can have more than one pic), and a description of your method. Please mention all ingredients used, not just the four mystery ingredients. Describe what you did as best you can so that people can recreate it if they like! A recipe would be ideal, but not totally necessary.

The Chopped Champion will receive:
~Fame, respect and the Chopped Vegan title
~A $50 Vegan Essentials Gift Certificate
~A signed copy of any of Isa Chandra Moskowitz’s (um, that’s me) softcover cookbooks
~A Post Punk Kitchen Apron
~I’ll throw in some other prizes, like vintage spatulas, candy, drawings and whatever I feel like sending you. It’ll be good, promise!

Hey Vegan MoFo-ers! Welcome to the first ever round up from the Brighton branch of MoFo HQ. I hope you’re as excited to be reading this as I am to be writing it! If you know me online or in that thing they call “real life” it will come as no surprise to you that I’ve been fixated on desserts recently & today is no exception. I’m in love with everything sweet! Cookies are always a favourite and I wish that I had one of Amey’s DiSaronno Cookies in my hand right now. These beauties were made by Mihl over at seitan is my motor, I love the story behind them too but you’ll have to head over to Mihl’s blog to read it!

The second cookie I would pop into my mouth Cookie Monster style are these PB&J Thumbprints from Joanna Vaught. As a massive lover of all things Christmas (Yeah, I said it!) I’m loving Joanna’s 30 Days of Christmas Cookies & Treats theme this year.

As a self confessed sugar addict I’d never say no to a muffin, especially not one as peachy as this Peach Punch delight (d’ya see what I did there?!) from fellow Vegan MoFo volunteer Erin at Meet the Wiko’s.

Another beauty that I would happily gobble up at breakfast time is this Molasses Raisin Bread from The Vegan Cookbook Aficionado. Yum! You Canadian’s have really got it going on in the bread department!

If you’re looking for a more serious dessert then check out this Pumpkin Pie from Mipa at Alien’s Day Out. As a Brit I’m still not sure how I feel about pumpkin in dessert but this looks truly spectacular.

If you’d like to pair your chocoholic tendencies with your sweet tooth then this is the dessert for you. This tofu based Chocolate Peanut Butter Mousse from an unrefined vegan is definitely something I’ll be bookmarking to make in the not too distant future!

If you’re looking to get really crazy with your dessert then I think this Ginger Maple Miso Ice Cream from Spabettie would be right up your street. I’m a huge lover of the combo of sweet & salty and this intriguing flavour would be my first choice at the ice cream parlour.

Last but by no means least we have a treat for your furry companions. These Peanut Butter Dog Treats from Kelly Peloza’s book The Vegan Cookie Connoisseur were made by Easy Vegan for her adorable friend Ralphie’s birthday, Happy Birthday Ralphie!

This year we only have one Italian participating in VeganMoFo, Quando spuntano i papaveri but most vegans I know are always swooning over pizzas and tomatoes still warm from the summer sun. I would even make a wager that many of them have a pot of basil growing somewhere. So today’s roundup brings you Italian favorites, Americanized and veganized in most cases. There is no need to veganize this plate of olives, though, that Vegan Eats and Treats recently served at her Mediterranean feast. I could stare at it all day. 

Nothing goes better with olives than the some herbed fermented cashew cheese and From Kirsten’s Kitchen to Yours has a beautiful looking recipe.

Summer squash, like all squashes, originally came from the Americas but, like the tomato, I always think of them when I’m craving Italian food in the summer because it was the Italians who cultivated the zucchini. These rosti’s with roasted apple salad are from a German blogger, The Vegan Way, and they look very appetizing.

Next, one of my favorite vegan artist bloggers My Zoetrope finally had success with making sweet potato gnocchi. They look beautiful and delicious swirled with the greens and sage butter sauce.

Keepin’ it Kind has a recipe for some roasted tomatoes and it also has the link to the recipe for the beautiful chickpea flatbreads she served under the tomatoes along with some pesto.

If beautiful food is what you are looking for check out this Roasted Garlic Pizza with caramelized onions and figs. I want to eat every piece but Vegan Road didn’t even save me one. 

And it wouldn’t be veganmofo without a gratuitous picture of a cat. My sister once told me that it’s the easiest way you can tell if a blogger is vegan, I guess we are the only ones that always post pictures of our animal companions with our recipes. I couldn’t resist this shot from Crack the Plate, it’s adorable.

Ashley: Today my son, who just turned 1 year on Oct. 3, cheered me up by taking his first steps (actually he took about 10 steps all by himself)! I love my little vegan man and his new frankenstein walk!
Krista: My families dog had to be put down recently and our friends cheered us up by giving us cards, flowers, hugs, prayers, etc to help us through the hard time. It was really special 🙂

I love my chocolate, this is no secret. And I like super fancy, fair trade, 70% cacao as much as the next girl, but sometimes you want a candy bar. Caramel, nougat, all that good stuff. That’s where Go Max Go comes in!

Not only does Go Max Go make awesome candy bars, but they are a really giving company. Early this year, my dog slid down our steps and dislocated his hip, which eventually required surgery. I mentioned it in the comments of one of their facebook posts and they asked me to email them, and when I did they asked for my address and sent me a huge package of candy bars and well wishes for my dog (who is now all better). If you’ve ever read the story behind their company name, their generosity isn’t that much of a surprise (but totally awesome).

I’m sure you’ve heard about their new bar that’s coming out next month, it’s a lot like a candy bar that rhymes with ‘sputter linger’ and it’s called Thumbs Up. They don’t have a final product photo yet, so we’ll have to make do with this prototype instagram photo:

As suspected, beets know no boundaries.  We’ve spanned cuisines and countries in this one.  This challenge even had some folks switching over from the beet haters side.
