Even though today is National Taco Day, it seems like everyone in the mofoverse is blogging about pizza, pancakes, beer, and soup. I think most people need a little comfort food in October, I know I’ve been searching everywhere for my arm warmers and thinking about hot chocolate. Today I wish I could have sat at home and cuddled up with the hounds. Then I would have invited over people from the internet to cook for me. I’d start my day with Oh Lady Cakes Pumpkin Spice Cinnamon Rolls they look so warm and sweet.Then for lunch I would make an appointment with Dr. Simpson to come and prepare me Sweet ‘n Sour Cashews & Chickpea nuggets because ordering in on a day when you don’t want to leave the house always gets me thinking of Chinese takeout and this meal looks just about right.Let’s get serious, since this is a fantasy, dinner would really take an entire team and it would have to be Southern style cooking. I’d love to try mollyjades’s Chicken-Fried Chickpea Cutlets. They would work great with a delicious side of Mac and Cheese, in this case Cooking with Color‘s re-creation of the Ultimate Uncheese Cookbook’s fabulous sounding recipe.Add to that my favorite winter green, Brussels sprouts, and you have got yourself a serious meal. Jessy cooked up some of Joni’s garlic and mustard roasted brussel sprouts and they would really be the perfect compliment here. After all this I would need something sweet but also small to these tiny Coconut Lime Cheesecakes by Vegan Culinary Crusade would fit the menu perfectly.After that, I would probably fall into a deep food coma, but it would be totally worth it.

Hi MoFoville! Jess here, heading into the first week of MoFoville with a corny post title and straightforward round up. I simply wandered the grand RSS Feed throughout the day, and bookmarked what I super duper liked. I mean, some of these things could wind up on the menu at my next dinner party. Some may inspire an obsession with a certain cuisine for the next month. Others, I just may dream about. They were all simply bookmark-able.

First up, the method for Emergency Oven-dried Tomatoes over at The Radioactive Vegan.  I totally want a batch!

Dynise, aka Urban Vegan, has a catchy post title and handy sauce-making method in how to succeed at spaghetti sauce without really trying. Follow her lead and taste those tomatoes, folks!

Scissors & Spice shows off a saucey spoonful of some delicious sounding October Fest Maple BBQ Sauce. What a great shot. Of course, I totally agree that maple is the best BBQ sauce sweetener, ever.

Love the look of Andy’s Velvetty Collards Soup with a swirl of hot sauce over at In My Vegan Life. Hello, fall. Hello…I want a bowl for lunch tomorrow.

This summer at Vida Vegan Con I had the pleasure of finally getting to meet the woman behind Panda with Cookie and check out her adorable creations in real life, they are even cuter in person! She also told me to check out the Flavor Spot in Portland where I got a vegan breakfast sausage and maple syrup wrapped in a waffle so she will always have a special place in my heart for that!

Howdy, MoFos!  This roundup is dedicated to things that remind me of my home.  I miss you, Texas!

BBQ.  Corrina, Darling is chowing down on some bbq tofu!  Her trick is to sear the ‘fu first and add the saucey goodness until it clings to the delicious tofu morsels.  Look at how delicious that looks!

Allergies.  This time of year was when I’d always get a sinus infection.  One of the daily themes going on at Choose Your Own Food Chain is “foods that heal.”  She posted a most excellent recipe for zapping those sinus problems away.  As a lover of ginger anything, I’m saving this for a down day.

Mac n cheese.  What, what?!  I don’t make it terribly often because it always reminds me of Thanksgiving back home.  Monica from Dorm Room Kitchen is making the heck outta some elbow macaroni with a little help from shredded vegan cheddar.  Aww yeah!

Halloween.  Whether it was dressing up for parties or heading out to haunted houses, I was always down to celebrate Halloween.  Check out Fork and Beans’ awesome Halloween spread!  It’s adorable like whoa.

Mexican food and fantastic produce.  VeganVintageGal’s CSA haul is the thing of dreams.  She turned the tomatillos into sauce and had some enchiladas verdes.  Holler.

Today we have an awesome giveaway from Gardein!  Gardein has a special place in my heart.  When I was living in Tennessee and I had to drive an hour to find a health food store, Gardein appeared in the local Kroger, one of the few pre-made vegan foods I could get that wasn’t a t.v. dinner.  I would often buy the tuscan breasts, a box of tofu, some broccoli, and I would have a quick dinner for my husband and I.  Now that I have access to a health food store i’m able to enjoy a wider variety of their products, we actually had the mandarin orange crispy chik’n last night (my only complaint being that I had to share).

These are a few of my favorite things

Sausage Balls from the I-40 Kitchen. I like ballz and I like recipes that take old Southern favourites and veganize them. These are the sausage balls of my youth. Make a batch of 300 and take them to the family reunion.  John will be doing southern all month long, so you’ll have your choice of what to take to Aunt Edna’s 85th birthday shindig.

Humourous verses from Mr. Ape’s World of Crepes. There’s nothing like a good Vegetable Verselet for a Humorous Vegetarian. And if you remember me from last  year, you know I like animals in chef’s hats.

Pumpkin chocolate chip cupcakes at Vegan Food Rocks. This is one of my favorite cupcake recipes from Vegan Cupcakes Take Over the World. I have a can of pumpkin waiting to be opened so I can have my fill. The temperatures dropped about 20 degrees overnight, so it is time to get my pumpkin on.

Adorable wee kitten at Joyfulgirl’s Cupcakes and Crafts. Oh yes. The wee ears. The tiny paws. I love cats. I love cats looking at homemade pumpkin puree. Put a cat photo on your blog and I am there.

The first time I bought Food For Lovers queso, I deeply regretted only buying two jars. This originally started as an amazing recipe on the internet, and Chris and Crystal eventually started selling to restaurants in Austin, then to Austin Whole Foods. Now you can mail-order jars, and I’ve even purchased their queso from my local health food store in Maryland.

This dip is everything queso should be. It’s spicy, creamy, and full of chunks of tomatoes and peppers. It’s great straight out of the jar, or poured over nachos, tacos, pasta, tofu scramble, and anything else you can think of.

One lucky winner will get four jars of queso and chips. Just leave a comment telling us how you’d like to use the queso. Don’t forget to include your email!
