Today’s round up is brought to you by the color brown.  Whether yellowish-brown, tan, or orangish-brown these dishes are absolutely stunning even though they are in the most misrepresented part of the color spectrum.

There are few things I love more than a good curry.  When I stumbled upon Hot Vegan Chick…peas!  kabocha curry, I just about died.

Okay.  I know I already linked to Kristen’s blog last time I posted, but this deserves a freaking round of applause.  SPECULOOS CUPCAKES!!!

This time of year is all about the pumpkin for me.  So check out Rabbit Food’s pumpkin chocolate chip muffins.  I don’t know that it gets more beautiful than that!

Dudes.  West Philly Vegan’s pumpkin spinach quiche is so beautiful, it will make you smack yo mama!

One of my favorite brown things is bread.  Becky is taking bread to a whole other level by smothering it in some humble home-cooked beans.  Oh, yes!

There is nothing I love more than awesome people.  I met VeganMoFo’s own Stephanie (Lazy Smurfy) this summer in Portland.  Her theme involves making things from Sunny Days in Texas, a zine that helps the Sunny Day Farms Animal Sanctuary.  Check out this freaking Frito pie.  Waaaant.

I don’t know about you, but I am a cookbook hoarder collector. Which is funny, because i’m not much for meal planning or recipe following. So for me, cookbooks are a thing to read and look at, and since there are so many vegan cookbooks out these days, I kind of have high standards. I will pretty much never buy a book without photos (except zines/DIY books), and I prefer that they have a special angle to them. Like, I know how to make a bean burrito already.

Which is why i’m so glad that today we are giving away two beautiful books that are sure to be a great addition to anyone’s collection!

First up, we have Vegan Caribbean by Taymer Mason (giveaway courtesy of The Experiment). This book is full of beautiful photographs, authentic Caribbean cuisine (Taymer is from Barbados), and I can guarantee you will learn about new flavors and dishes with this book. Here are samples of some of the recipes that await you: Curried Potato Salad, West Indian Pumpkin Fritters, and something really exciting, Holiday Ham!

The second book is Rabbit Food by Beth A. Barnett. This book is spiral bound, full of neat info like how to make your own grocery bag and some food history, and a ton of adorable illustrations. Beth used to put out the book all by herself, but has recently passed production onto Sasquatch Publishing (who are sponsoring the giveaway), this brand spankin’ new edition has new recipes and updated resources, but is just as cute as before! Beth has up lots of pictures and some sample recipes here, you really need to check out the pictures to see how much effort she put into it. Also, check out her etsy shop for more handmade paper items.

Since these books are from separate publishers, Vegan Caribbean is US only, while Rabbit Food is open to US and Canada. Erin, who’s in Australia, has been delighting me all through MoFo with her street food theme, her recipes are a joy to behold. Today’s food was from Turkey.

Last week was kind of hard, so this week we’re going with something a little easier.

A quick review of our few simple rules/guidelines:

1. Whatever you come up with has to be new, nothing from a cookbook or a blog, not something you posted last week that happens to involve the secret ingredient. It’s fine to use a recipe for a jump-off point, but make it your own!
2. Entries are due at 3 pm CST on Sunday (but it takes me awhile to read all of the entries so if you’re a little late it’s no big).
3. Have fun and be creative!

And the secret ingredient is…

COCONUT!
Coconut is a fabulous ingredient because while it’s sweet, it easily translates into savory dishes. Plus, you can get it in so many ways: canned milk, shredded and dried, extract, oil, fresh, etc. Any form is welcome!

There’s no special theme today, I just picked food that I really want in my belly, right now.

I stumbled across this stunning Grilled Tofu with Lemongrass and Cilantro Stuffing at Olives for Dinner which sounds as gorgeous as it looks. I can tell just by reading the ingredients that I’d love this dish.

I also wouldn’t turn down a big plate of Jerk Tempeh with Caramelized Plantains and Butternut Mash Up over at Whole Food Vegan. Spicy Jerk seasoning over earthy tempeh with sweet plantains and butternut. Hell yeah!

Now, these Balsamic Caramelized Cipollini Onions at The Raw Cooked Vegan aren’t a complete meal, but they sure would make just about anything better! I would love these on top of some hearty bread with arugula and maybe a little Cheddar Cheezly. Or maybe I’d just snack on them out of the skillet.

Another dish I wish would magically appear on my dinner table tonight are these Hijiki Tofu Burgers with Carrot Ginger Dressing at vegangela. This dish sounds so flavorful and satisfying, but would probably still leave me a little room for dessert.

I love banana soft-serve, and the Banana Split Ice Cream at Veg-am takes it to another level with the addition of banana split toppings – chocolate, peanuts, strawberry, and pineapple.

I’d eat Oh, Ladycakes Pumpkin Spice Stick Bread for breakfast, then I’d have it again for dessert.

Sometimes, a meal just doesn’t seem complete without a mint. I would love to nibble on these homemade Junior Mints at Fork and Beans. I wish the cats would leave mints on my pillow, but I don’t think they can be bothered. I guess I’ll just have to make them for myself!

Two of my favorite vegans are contributing to today’s fabulous prizes.First up is the fantastic Michelle Cavigliano, the Brooklyn artist behind My Zoetrope. I am just smitten with her art, not only do I have several of her pieces brightening up my cookbook shelf but I also love her blog. For veganmofo this year My Zoetrope has been featuring a different drawing of an animal or vegan food item every day and donating the money to animal sanctuaries. I think I might have to get the hamster! Earlier this year “It’s Veganlicious” even got Michelle to do the art for her tattoo! You are never going to believe this but you could win the woodland jamboree because she is giving away any TWO prints from her shop, regardless of size (up to $40 value) to anyone in the world!

Equally exciting is that Jeanette Zeis the creator of Vegan Dish, your one stop shop for vegan vessels, is also giving away fabulous prizes today as well. I have a veganmofo mug that I adore and let me tell you that there is a great side benefit. If you live with nonvegans no one else will ever use your vegan mug! They don’t want to look like a wannabegan!Jeanette is also doing an amazing giveaway for either a mug or a set of four bowls. What an awesome prize for a family that eats a delicious breakfast together of cereal with almond milk out of their vegan bowls! Or, more likely, a single person who doesn’t ever want to dishes again during the week. I want them bad.

I use a random number generator to choose winners for fairness, but I think olives are gross, so after drawing four olivey pizzas I decided to hand-pick the last answer. Onions and garlic, heck yeah!

Shannon, “My dream pizza is one I just started making recently. I make 2 french bread rolls. After they are done and cooled off, I cut them in half and into fours. I use them as my crust. I top them with sauteed mushrooms, garlic, onions, and kale. I put a thin layer of Daiya on top, after I sauced them. Then I add my veggies, followed by another layer of Daiya. After I pop them out of the oven I sprinkle some vegan paremsan cheese on top along with a little basil and oregano. Sometimes if I add a little Sriracha to give a kick!”

There are a few touchy subjects among vegans that everyone has strong, differing opinions on. One of the big ones is which brand of vegan cheese you prefer, if any. Every brand has its fans, and the same brands have people who think it’s completely gross. But who cares, we now have more vegan cheese options than you can shake a stick at!

Daiya had the vegan world a-buzzing before it was even released. Shredded cheese? That melts? That isn’t soy? And if you’re a fan or not, you can’t deny that Daiya has really pushed vegan cheese out into the mainsteam. I have seen it Kroger grocery stores, a place where I have never seen anything but those non-vegan veggie shreds. It’s in Amy’s products, Gardein, Tofurkey is making frozen pizzas with it…and restaurants are using it! Getting a vegan pizza where you don’t overpay for them to take off the cheese is an exciting thing, especially if you don’t live in a big city where vegan foods are easier to find.

My personal favorite way to use Daiya is pepperjack flavor + tortilla = instant quesadilla!
